Thierry Marx has dreamt about baking since childhood, inspired by memories of the delicious aromas in the bakery in Ménilmontant, Paris. Now, as the executive chef of the Mandarin Oriental and holder of two Michelin stars, Marx is well-known for his dynamic approach to cooking. A seasoned traveller, Marx supports the idea that food is an important part of cultural identity. He believes strongly that failure is not fatal, and has set up a number of free training centres teaching cookery, baking and food service skills. In fact, it was the process of opening his bakery school in 2014 that reignited his passion for bread.
